What Is Sonoran-Style Mexican Food?

Sonoran food is the regional cuisine that originates in the Mexican state of Sonora. The state shares a name with the Sonoran Desert, which is primarily located in Sonora and Arizona. This desert is the wettest in the world and the hottest in North America, which allows the cultivation of a few specific foods and seasonings that frequently star in Sonoran food, including prickly pear cactus, squash, mesquite flavor, and of course, chilis. At Sabrozon Fresh Mexican Restaurant & Catering, we are thrilled to bring the authentic taste of the Sonoran region to western Oregon through our restaurant and catering service!

Differences Between Sonoran & Traditional Mexican Food

Let us share with you the details of some of the most delectable Sonoran foods that we serve in our restaurant and have available for catering.

Sonoran Tacos

First up is our Sonoran Taco, which is filled with hearty nopalitos – diced prickly pear cactus pads. Don’t worry, the cactus spines have been removed! This traditional Sonoran ingredient is the star of our tacos, and it’s served on two hand-made corn tortillas with warm black beans, queso fresco, and pico de gallo. You also have the option to add grilled sirloin steak to your Sonoran Tacos to make them extra filling and delicious.

We also offer a Baja Fish Taco, which is another Sonoran classic. Despite being mostly a desert, Sonora also borders the Gulf of California, where shrimp and fish are plentiful! Our fish tacos come with either fried cod or fried shrimp, which is served on a corn tortilla or a lettuce wrap and topped with cabbage, pico de gallo, and our special Baja Ranch dressing.

Sonoran Enchiladas

We serve a variety of enchiladas, with your choice of filling rolled into corn tortillas and topped with one of our divine house-made enchilada sauces: green chili sauce, red chili sauce, mole sauce, or a chocolate-based house red chili sauce. Our filling options include mixed cheese, queso fresco, grilled veggies, pollo asado, shredded chicken, machaca, pastor, chorizo, carnitas, or grilled sirloin steak. With so many options for both fillings and sauce, there is a Sonoran Enchilada for everyone!

Sonoran Tortillas

In traditional Sonoran style, we hand-make all our corn and flour tortillas in-house, so they are fresh daily and always delicious! These staples make an appearance in nearly all of our dishes, so it was important to us to get them right – they had to be authentic.

Sonoran Quesadilla

Sonoran quesadillas are different than your average quesadilla in that they are open-faced, almost like a Mexican pizza. We start with a crispy flour tortilla and load it with tons of cheese, beans, lettuce, pico de gallo, nopalitos, and sour cream. You can also choose to add pollo asado, pastor, machaca, chorizo, carnitas, shredded chicken, grilled veggies, or grilled sirloin steak to make this into a heartier meal.

Sonoran Fajitas

Fajitas are another familiar food item, but ours are Sonora style which means they are super flavorful and come with some unfamiliar elements. Your choice of marinated meat or veggies will be served sizzling hot with sauteed onions, peppers, mushrooms, zucchini, and seasoned corn wheels. They come with rice, beans, guacamole, and fresh tortillas. You can choose from grilled veggies and nopalitos, chicken, steak, or shrimp for your protein.

Sonoran Chimichanga

Our menu wouldn’t be complete without these deep-fried delicacies! We start with a giant flour tortilla, fill it with beans, cheese, and your choice of protein, and then we deep fry it until it’s golden and crispy. Finally, it’s topped with guacamole and sour cream. You can also choose to make your chimichanga enchilada-style, which means it will be doused in your favorite chili sauce.

Sonoran Beef Milanesa

This dish actually has some Italian influence, but it is another staple in Sonora. It is a thin slice of beef that is coated in breading and then fried, and it’s served with french fries, rice, beans, guacamole, pickled onions, and corn tortillas. This dish isn’t found at your typical Mexican restaurant!
